It’s that time of week again! Pop-ups are coming in thiccc and fast: now more than ever chefs are throwing exciting, unpredictable events at new locations that you could- no, will definitely miss if you blink. Thankfully, we gotchu! While everyone and their grandma seems to be away from NYC, we recommend you treat food pop-up events like mini vacations. The 8it Drop Digest is a taste of what you can discover in the Pop-Up & Drops category on the 8it app each week.

Jay Wolman Residency
Ostudio at Night
Where: Bed-Stuy
When: July 29 // 5-10:30PM
What’s the drop?
The menu at Ostudio during this residency includes whole trout with sungold tomatoes, pork terrine, cured duck breast with fig mustard, and an heirloom tomato carpaccio. The Along with the nightly menu, Ostudio’s instagram feed has showcased specials such as Clams with curry and sungolds, burrata with fava beans and anchovies, and a crudo with hazelnuts and pickle cherries.
Why should you go?
Wolman, formerly of King, Diner, Marlow & Sons, and Hart’s describes his approach as “unapologetically simple” (via his website). The menu simply highlights two to three ingredients in each dish rather than giving them a whole new name. This approach is further explained on a poster Ostudio released for this residency which included the quote, “There’s no bells and whistles. It is what it is. It’s cooked properly, and it’s meant to be shared and it’s meant to be enjoyed.” Friday is Wolman’s last night at Ostudio for this residency and it’s not one to miss for eaters who like quality ingredients to be the star of the show.
Kaylee Corner Pop-Up
Corgi Spirits
Where: Jersey City
When: Sunday 7.31 // 2-8PM
What’s the drop?
Chef Kristine Mana-ay will be serving up empanadas filled with beef kaldereta, chicken ala king, and pork longganisa at the Human 2 Human market that will feature 25+ vendors. Get them while you can because they go fast!
Why you should go?
Chef Kristine caught our attention with mouthwatering lechon at Greenpoint Terminal Market recently. Her mastery of textures and flavor combinations will make you do a little dance. Heading to Jersey City to attend her pop-up will certainly be worth the vibe.
Greg Wong x Soomin Yoon
Fulgurances
Where: Greenpoint
When: Tuesday-Saturday through 8.27
What’s the drop?
The menu at Fulgurances constantly changes so it’s hard to pin down, but one of the recurring dishes of this residency has been the braised octopus dish (above). According to Fulgurances’ Instagram, it’s cooked in a broth of kombu, jalapeno, and korean radish, seasoned with szechuan pepper, and served with that beautiful ssamjang and squid ink that should be in the MOMA. Not pictured is a blue crab dish preserved in soy sauce, apples, red dates, and seaweed, served with rice, toasted seaweed, and spring onions.
Why should you go?
Fulgurances residencies are no joke so when two chefs pop in to team up for two months, you know the food is going to be delicious and also push boundaries. Wong and Yoon met while working at Estela where their chemistry developed, and together they like to get creative with Asian-American food (via Fulgurances’ Website). “Their enthusiasm is contagious,” says Fulgurances so should you go, you’re in for an electrifying experience.

When: Friday 7.29 // 10AM until sold out
What’s the drop? Klondike dropped the news Monday that their Choco Taco will be no more, but that’s not stopping Comfortland. In their typical fashion of sharing the joys of food nostalgia, they have saved the Choco Taco and restored justice in the frozen dessert world.
Why should you go? The loss of Klondike’s Choco Taco caused an internet uproar, so without a doubt, a chance to get your hands on this dessert wonder one last time will attract a huge crowd. Get it while you can!

Bronx Night Market
Fordham Plaza
Where: Belmont, Bronx
When: Saturday 7.30 // 1-7PM
What’s the drop?
50+ vendors representing the cuisines of more than 20 countries will fill Fordham Plaza (via Bronx Night Market’s website). Vendors will have lobster rolls, tacos, empanadas, stuffed tostones (pictured), and more. There will be music as well. Entry is free just remember to RSVP.
Why should you go?
