The pop-up game is popping off! Now more than ever chefs are throwing exciting, unpredictable events at new locations that you could miss if you blink. Thankfully, we gotchu! We’ve reached the heat of summer in NYC and while some are splitting time between the city and the Hamptons, we think its best you split time between food pop-up events and being parked in front of your air conditioner. The 8it Drop Digest is a taste of what you can discover in the Pop-Up & Drops category on the 8it app each week.

Tikkun BBQ X Mama Lam’s

What’s the drop?
A Malaysian mother-daughter team and a socially impactful Barbecue pioneer are collaborating to bring you dishes you’ve likely never seen before. Thiccc Sliced Satay Glazed Pork Belly, Hot Honey Pork Spare Ribs, Red Curry Smoked Chicken Legs, Spicy Malaysian Pulled Pork, Malaysian Style Summer Salad, and a chopped brisket sandwich with spicy grilled purple cabbage slaw are on deck!

Why should you go?
This is a rare opportunity to try incredibly creative food that results in community impact. During the heat of the pandemic, Chef Eli Goldman was inspired by Italians who were lowering bread down from their balconies to their neighbors in need (via Good Morning America). He began to do it himself, donating 100% of the money. This has since evolved into Tikkun BBQ, a pop-up that donates most of their profit back to the community. Goldman tells us, “bbq isn't just a type of food - it's a social gathering that basically anyone in the world can get behind and understand.” Enter Mama Lam’s, a curry paste and hot sauce company that has brought jars of bold Malaysian flavors to America. They can seriously cook too. We can’t wait to see the range of barbecue in full bloom on Saturday.

Sunday Supper
The Stand NYC

What’s the drop?
Slide over nonna! Chef Anthony Vitolo of Emilio’s Ballato and Chef Stephen Cusato from “Not Another Cooking Show” on YouTube are teaming up to cook a family-style Italian dinner at this famous comedy club on Sunday. These two chefs have been looking to collaborate for some time, building up anticipation for this event. Chef Anthony tells us, “We’ve been talking about it for a while now just haven’t been able to get it done with both our schedules . Both of us have the love and passion for Italian food so we thought it’d be fun to throw down together.” We can’t wait to see them put on a show.

Why you should go?
Family-style Italian and entertainment will intersect at this event and there’s already some natural overlap between the two. “I mean Sunday dinners usually there’s always some comedy involved especially in Italian families,” said Chef Anthony. Summer Tomato Caprese, Spicy Caesar, Roasted Broccoli, Tagliatelle Alla Bolognese, and cookies are on the menu. The dinner is followed by a comedy show and special guest comedians will be in attendance. Head to The Stand on Sunday night for some laughs and heartwarming food that will make you feel right at home.

Waroeng Chap. 7 Kamayan

What’s the drop?
A nine-course dinner where the dishes get bigger and bigger as the night goes on. Kamayan is a Southeast Asian communal feast served on bamboo leaves. Chef Daniel Le of Essex Pearl, where you can find some of the freshest seafood in the city, will lead the charge. His team for the evening will include Chef Francis Maling from Bad for Business, plus Nigel Sielegar from Moon Man and Sea Monster.

Why should you go?
Not only does the menu promise dishes you won’t get the chance to eat every day, the food is substantial and well-balanced. The menu will feature Lechon Wraps, turmeric rice, tofu, potato, and egg, BBQ Hamachi Collar, and Indonesian stuffed fish just to name a few. It’s a midweek feast that will feel like Friday came early!

Little Manila

What’s the drop?
Lechon croquettes from PATOK by Rach, mochi cookies from The Boiis Co. and two blocks of many more Filipino vendors. The Boiis Co. tells us, “Basically it's an area in Queens called Little Manila where you can find the most Filipino groceries, Filipino bakeries, Filipino Salons and Filipino restaurants.” Little Manila became the official name of this little section of Woodside on June 12th and this pop-up market highlights the creative contributions of many Filipino vendors.

Why should you go?
If you haven’t tried lechon yet, we suggest you pig out at Little Manila on Saturday. It’s really porking good. The crispy skin wraps around its succulent meat, and if you’re lucky they’ll serve it with a bit of shrimp paste. Don’t hate, pork and seafood go together like Queens and the Philippines. Head down to Little Manila this Saturday to see the prolific NYC Filipino food community in action!

Brooklyn Night Market

Where: Sunset Park

Monday 7.25 // 4PM-10PM


What’s the drop?
40+ small busines vendors popping out to show you just how deep the Brooklyn food scene rolls. The last market had everything from hot dogs to tacos to chopped cheese fried lasagna. Fried Lasagna Mama who began making her specialty in 2013 also has a veg fried lasagna, and a dessert option called Sharice’s Sweets.

Why should you go?
Spice up your Monday night with some street food, yerrr? This market is full of surprises; you might stumble upon a vendor of something that you’ve never tried before. Chef Janae from Fried Lasagna Mama tells us, “There are great chefs out here that are putting their all into these foods and putting smiles on peoples faces. You get to have a one-on-one with the people who make top-tier food, and that’s special.” There will be so many options to choose from that nobody would blame you if you brought multiple to-go containers so you can bring home enough morsels to stuff your fridge with.

These pastries could have transported you to another part of the world from Italy with Mascarpone Burrata to Mexico with Milk Chocolate Tacos. Thursday marked the end of the Around the World Collection so if you don’t have any summer travel plans, Chef Dominique can’t save you anymore. But don’t fret, summer in New York just got sweeter with their Summer Marché collection.

For National Hot Dog Day on June 20th, Mission Sandwich Social popped out with this stunning hot dog-sandwich hybrid. So that whole “is a hot dog a sandwich?” debate can finally be put to rest. You may have missed this one, but Mission’s Peking Turkey Sandwich is a hot commodity generating a lot of buzz.
