Someone call Andrew Zimmern, because the kitchen will be breaking the bugs out with an amuse bouche of ant butter and crickets on a fresh pressed corn tortilla. Next, grilled prawns in leche de tigre and summer squash fritters will lead up to a buttermilk and chile-brined young chicken cooked in chile butter chicken fat. Vanilla bean ice cream with summer cherry syrup, toasted almonds, and more ants- this time spiced with cinnamon sugar, will round out the dessert course.
